Dough:
200 g white wheat flour
50 g Teff flour Midzu
1 tablespoon tukmaria seeds Midzu
130 ml natural orange juice
50 ml olive oil Midzu
Filling:
8 apples
3 tablespoons goji berries Midzu
1 cinnamon stick
filtered water q.b.
cinnamon powder q.b.
In a bowl add the flours and the tukmaria seeds. Add the olive oil and the apple juice (which can be prepared in the Midzu slow juicer). Grease a cake pan with a few drops of olive oil.
For the filling wash 6 apples and cut into small squares (if the apples are organic you can use them with peel). You can also add apple waste (if necessary slightly reduce the amount of apples used) from the Midzu slow juicer.
In a pot place the apples, 2 tablespoons goji berries and the cinnamon stick. Add water just to cover the fruit. Cook over low heat until the apple is cooked.
Remove the cinnamon stick and mash with the hand blender.
Pour the dough carefully in the pie plate, cut 2 apples into thin slices and spread with 1 tablespoon of goji berries.
Push the berries until they are immersed in the dought (to prevent them from burning during the baking). Sprinkle with cinnamon and bake at 170 ° for about 35 minutes.
Serve with apple juice.
