Orange Date Cake

Ingredients:

400 g wheat flour or white spelt flour
100 g whole-wheat flour
250 g dates Midzu
650 ml orange juice
2 tbsp golden linseeds
3 tbsp coconut flour Midzu
zest of 1 orange
150 ml extra-virgin olive oil Midzu or coconut oil Midzu
1 pinch of vanilla powder
1 sachet (17g or about 2 tsp) organic baking powder

Preparation:

Chop the seedless dates into pieces (or buy date pieces). Pour the dates into a food processor (a liquifier or a grinder will also do the job perfectly) together with the seeds and some flour (which prevents the dates from getting stuck in your grinder blades) and grind them well into powder.

Then, juice the orange using the Midzu Slow Juicer (you can also use mandarin oranges or tangerines) until you get the juice quantity you need.

Pour the flour into a bowl and mix together with the date powder and the orange zest. Slowly add the orange juice. Then add the olive oil and mix all together until you get a homogeneous dough. (If necessary you can add some more juice or flour for this purpose).  Mix the baking powder.

Grease the cake pan with some olive oil and pour the dough into it. Bake in a pre-heated oven at 180ºC for about 40 minutes.

Use some dates to decorate.

Notes:
This a healthy and nutritious recipe, the perfect treat for your family with no dairy products, no eggs and no sugar added. The dates and oranges work as natural sweeteners. Choose quality dates with no added glucose syrup (dates with no glucose syrup don't look glossy). Dates can be used as a sugar substitute in many cake recipes.
