Ingredients:
100g wheat flour
100g whole wheat flour
1 tablespoon Peruvian maca
70g brown sugar
1 teaspoon baking powder
4 tablespoons goji berries
1 tablespoon tukmaria seeds
300ml soya milk
extra-virgin olive oil
Preparation:
Soak the goji berries and the tukmaria seeds in the soya milk for about 30 minutes.In a separate bowl, mix well the flours, maca, sugar and baking powder. Add the soya milk with the berries and seeds and stir well. Add a tablespoon olive oil and mix well until you obtain a consistent dough.
Grease the cupcake pans with olive oil and sprinkle them with some flour. Pour the dough into the pans and bake for about 20 minutes at 170ºC.
