Ingredients:
1 litre soy milk
100g goji berries
3 tablespoons brown sugar
juice of 1/2 a lemon
3 tablespoons agar-agar
2 tablespoons corn starch
Preparation:
Soak the berries in a little soy milk for about 2 hours.
Blend together the milk, lemon juice, berries and sugar. Then, bring the mixture to a boil and add the agar-agar and the starch already dissolved in a bit of milk. Stir well and remove from heat.
Pour the mixture into a bowl and refrigerate until firm.
If you like, coat the bowl in caramel sauce first.
